Autumn Days – My Favorite
Visiting with some of my family:
I have been busy and haven’t posted or baked much lately. However I always seem to be thinking about sourdough anyway. While visiting family in California, I came upon some “California Sourdough” baked in the Midwest and shipped to the coast. I think it should have read, “Midwest Sourdough.” I decided to pass on it. I would like to find more local Artisan sourdough style breads to review.
I was in California the same week Peter Reinhart was in San Francisco but I did not find out about it until I returned and checked Pizza Quest. It would have been nice to meet him. I have been thinking a lot about the autolyse process and am planning to write about it for a future article. It is especially helpful to use an autolyse for high protein pizza flour. I worked with some high protein flour while I was in Hawaii two years ago, I enjoyed experimenting with it. One of the posts I did at the time on the high protein flour you can find here.
Also, I was chosen to test out Brod and Taylor’s new Bread Proofer. That should be interesting. Any of you who are regular readers know that I have come up with some unusual home proofers, like my microwave and my dishwasher (what will she think of next???)
