All three pdf files were updated to include the newest links to my blog and website. I had to move my site files to the root directory and I broke links. So download and save over the older pdf files.

Part 2- page 38 -

Extra Sour Sourdough: The first list of ingredients has several mistakes. It should read:

  •  2 cup vigorous sourdough starter @166% – 18 oz
  •  1 ¾  cups water tepid water– 14.0 oz
  •  1 Tablespoon oil – .5 oz
  •  ½ cup Rye Flour – 1.8 – oz
  •  ½ cup Whole Wheat flour – 2.1 oz
  •  6 ¼  cups Bread flour –1 lb 12 oz
  •  1 teaspoon diastatic malt powder - .1oz
  •  3.5 teaspoons salt - .7 oz (add after autolyse)

Use the table instead. The table left out the diastatic malt though - use .1 oz of disatatic malt (not 1 oz).

Typos on page 129 and 134 of Part 3 Advanced - The table withe the 70% hydration motherdough has listed 1/4 cups (approx) of flour -10 oz. It should read 2 1/4 cups (approx) of flour -10 oz
