    I grew up in a bakery. Scraped my first pan in 1952. Sold bakery ingredients for 32 years (Westco/ Bakemark, and Honeyville Grain). In other words I’ve seen a lot of great bakers and bakeries.

    HAPPY BIRTHDAY, Teresa! I love your classes!

    I started my sourdough odyssey on YouTube where I came across your videos. I quickly found my way to Edemy where I have purchased #2, #3, #4 and your new challah class. (Each had been reduced in price, thank you.) Every one of my loaves has baked off wonderfully. My very favorite formulas are March Madness Sourdough and Flaxseed Heaven! I usually gift Alaska Sourdough wrapped in a flour sack towel. It is an easy, reliable, no-fail loaf that has never failed to impress!

    Initially, I was concerned how high altitude and humidity (or lack thereof) would affect my starter and bread, but so far I have been very successful. Sourdough seems to be very flexible and I only need make just a few adjustments.

    I appreciate you sharing your tools and equipment, as well. You saved me time and money allowing me to go directly to your method and start creating wonderful bread!

    Hoppy Boidies, Two Ewes. Many thanks for all the help and advice over the years. One of my prized baking tools is the hardwood handled lame your son was making to earn tuition money. I made my starters (white and rye) about 7 years ago and was freeforming the loaves for years until I saw your notes on Blister Crust. That got me to change the hydration and start to use baskets. The most affordable ones were old Easter baskets at local thrift shops, with handles cut off. I am about ready to graduate to real banetons, and would love to win those on offer.     Happy birthday – your courses look amazing and could just be the boost I am looking for – I was motivated by baking for our 2 boys when we moved up to Scotland, they were 1 and 3 and I started to bake in my Aga, as I wanted them know what real bread tastes like. I could buy Poilane in London, but nothing like it up here.     Happy birthday from Queensland, Australia. I have recently rediscovered sourdough bread, and I’m really impressed with the research that I’ve uncovered, so far. My late father had tried to get me interested, maybe 20 years ago, however the stress of raising a young son and a shaky marriage was more than I cope with. My new partner is even impressed – he’s only beginning to get his head around my background in natural medicine – he’s given up his commercially manufactured “wholegrain” loaf (aka bleached white flour with grains and seeds tossed in), and actually went out and bought a sourdough loaf from a local baker. I look forward to next week, when I can bake him my first loaf with stone-ground, organic wholemeal flour. It’s still quite warm here – despite the fact that it’s supposed to be autumn – so my starter is chugging along nicely. Thanks Teresa, for sharing your wealth of knowledge, and your birthday. Enjoy! 🙂

    My good friend passed away a month ago and it hit me the other day that she had sent me some dried starter a year prior. I poured thru my cupboard and thankfully found it. My friend Helen was know. For her love of cooking, especially her traditional Tlingít foods from the land (Southeast Alaska). Thankfully her dried starter reconstituted well and I am learning how to use it. My friend Helen got her starter from a Yupik woman, Bella, 40 years prior who was the then First Lady of Alaska, the wife of the widely loved Alaska Governor Jay Hammond.

    I want to learn more.
