Judd Friedman – Pain de Campagne

I would like you to meet a magnificent baker, Judd Friedman. His blog, Weekend Loafer, is  fun, inspirational and filled with his pursuit to bake good bread.

I was struck by his efforts to recreate, in a home baker’s situation, an environment that would allow him to bake professional looking breads. As you know, I have struggled with that as well and I know most of you serious at home bakers do too. Judd’s Pain de Campagne is a simple elegant loaf and quite showy. The inspiration for it came from Daniel Leader’s book, Local Breads.
