Two Day Sponge Sour

 

 

Sponge Sourdough

Makes 3 loaves around 2 pounds each.

In the evening around 7 - 8 pm...
For the Sponge:In a large mixing bowl combine:

  • 3 cups active starter
  • 3 cups warm water
  • 2 Tablespoons Oil
  • 2.5 cups all purpose flour
  • 3 cups bread flour
Stir all ingedients for about 1 minute. Let bowl of sponge mixture sit,
covered, overnight and until next day:(alternately, you can refrigerate overnight)

Next day in the afternoon about 1.00 pm, Add :

  • 4 teaspoons of non iodized salt and
  • approximately 4 - 4.5 cups of bread flour.

Knead in, either by pouring the sponge into a dough mixer and processing for about 3 minutes or by kneading in by hand. Let proof again for about 6 hours. Shape loafs of bread , put into bowls or baskets lined with proofing cloths and sprinkled with flour. Place each loaf into a plastic bag and refrigerate overnight. Next morning take out and let finish proofing, when ready, slash, spray and bake per the usual instructions(on the recipes and techniques page).
