When the first loaf is ready and the oven is hot enough (450 degrees), sprinkle some flour on what will be the bottom of the loaf, then turn over the first loaf onto the bottom of the cookie sheet or bread peel. Lift off the bowl and then carefully peel off the bread cloth from the loaf (spritz the cloth with water if it sticks). Slash the top of the bread however you want, and then quickly and deftly slide the dough onto the baking stone inside the oven. This step is hard to do the first few times because you are afraid the dough won't slide onto the stone correctly. However, if you make sure the bottom of the loaf has enough flour (Semolina is best) sprinkled on it so the loaf does not stick, you won't have any problem.
After you slide in the oven shelf with the bread on it, spray the oven and loaf with water to get the oven good and humid. Shut the oven door and put the timer on for five minutes. During the five minutes I mist the oven at least three or four more times. When the five minutes is up, mist one more time, and turn the oven down to 425 degrees. Put the timer on for 12 minutes. After the 12 minutes is up, turn the loaf of bread around in the oven to brown the other side.
If the loaf is stuck to the stone at this point, I get a sharp knife and slide it under the loaf so it can be turned. Mist around the bread and oven again, and close the oven. Put the timer on for 12 minutes more. When the 12 minutes is up.... you should have a terrific loaf of sourdough bread!!! If the color isn't as dark as you would like or the loaf doesn't sound hollow when you tap on the bottom, put the loaf back in for another 3 - 5 minutes. Take out the bread and don't forget to turn the oven back up to 450 for the next loaf. Repeat all directions for the second loaf.
Your loaf of sourdough should sound hollow when tapped on the bottom when you take it out of the oven and it should be a wonderful golden brown color. Wait until it cools completely before slicing. When it is sliced open, it should have a nice holey appearance. Spread with real butter and eat....yummmmmmmmm !!!!!
